Easy One-Pan Sausage Dinner with Prendergast Gold Sausages

There’s nothing better than a hearty home-cooked dinner — especially when you can make the whole thing in just one roasting tray.

This easy One-Pan Prendergast Gold Sausage Dinner combines our award-winning pork sausages with crispy potatoes, colourful vegetables and a simple honey and mustard glaze. It’s full of flavour, requires very little preparation and, best of all, means hardly any washing up afterwards.

The Star of the Dish: Prendergast Gold Sausages

A simple sausage dinner is only as good as the sausages you put into it.

Our Prendergast Gold Pork Sausages were awarded Silver at the 2019 Great British Butchers Awards and are handmade with care by our butchers.

We make them using selected lean cuts of leg and shoulder from locally reared Welsh pork, combined with just a little seasoning before filling them into natural sausage skins.

The result is a proper butcher’s sausage packed with flavour — and the perfect centrepiece for this easy family dinner.

One-Pan Prendergast Gold Sausage & Vegetable Bake

Cooking time: Approx. 45–50 minutes

Ingredients

  • 8 Prendergast Gold Pork Sausages
  • 750g baby potatoes, halved
  • 2 red onions, cut into wedges
  • 2 peppers, roughly chopped
  • 2 carrots, cut into chunks
  • 3 garlic cloves, lightly crushed
  • 2 tbsp olive oil
  • 2 sprigs fresh rosemary
  • 1 tbsp wholegrain mustard
  • 1 tbsp honey
  • Salt and freshly ground black pepper

Method

1. Get the potatoes started

Preheat your oven to 200°C fan / 220°C conventional / Gas 7.

Place the halved baby potatoes in a large roasting tray. Drizzle with half of the olive oil, season with salt and pepper and toss everything together.

Roast for around 15 minutes to give the potatoes a head start.

2. Add the Prendergast Gold Sausages

Remove the tray from the oven and add the Prendergast Gold Sausages, red onions, peppers, carrots, garlic and rosemary.

Drizzle over the remaining olive oil and give everything a good toss so the vegetables are lightly coated.

Return the tray to the oven for around 20 minutes.

3. Add the honey & mustard glaze

Mix the honey and wholegrain mustard together in a small bowl.

Remove the tray from the oven, drizzle the mixture over the sausages and vegetables and gently turn everything to coat.

4. Finish in the oven

Return to the oven for another 10–15 minutes, or until the sausages are thoroughly cooked and beautifully browned, the potatoes are golden and the vegetables are tender and beginning to caramelise.

Then simply bring the tray to the table and tuck in.

Make It Your Own

One of the best things about a one-pan dinner is how easy it is to adapt.

Use whatever seasonal vegetables you have available. Parsnips, butternut squash, courgettes and sweet potatoes can all work brilliantly.

For an autumnal twist, try adding chunks of eating apple for the final 20 minutes of cooking. Pork and apple are a classic combination, and the apple becomes wonderfully sweet and caramelised in the roasting tray.

Fancy a little heat? Add a pinch of chilli flakes to the honey and mustard glaze.

And if you want even fewer dishes to wash, serve it straight from the roasting tray with some crusty bread for mopping up all those delicious juices.
