A Butcher’s Guide to Cooking the Perfect Leg of Pork

Few things are more satisfying than serving a beautifully roasted leg of pork with crisp crackling and tender, juicy meat. Whether you’re planning a traditional Sunday roast or cooking for a special family gathering, a quality leg of pork is always a crowd-pleaser.

At Prendergast Butchers, we’re often asked for advice on how to get the very best from a pork joint. Here are our top tips to help you cook your leg of pork with confidence.

Choosing the Right Joint

A leg of pork is a fantastic choice if you’re feeding a family or entertaining guests. It’s a lean, flavoursome cut that roasts beautifully while still delivering plenty of succulent meat.

When buying your pork, choose a quality joint from a trusted butcher. At Prendergast Butchers, we carefully prepare every leg of pork to ensure excellent flavour, even cooking and the perfect balance of meat and fat.

Bring It to Room Temperature

Take your pork out of the fridge around 30 minutes before cooking.

Allowing the joint to come closer to room temperature helps it cook more evenly from the centre to the outside, resulting in a more tender roast.

The Secret to Perfect Crackling

If there’s one question we hear more than any other, it’s how to achieve perfect crackling.

Our advice is simple:

  • Pat the rind completely dry with kitchen paper.
  • If needed, score the skin with a sharp knife, taking care not to cut into the meat.
  • Rub the skin generously with sea salt.
  • Start the roast in a hot oven to encourage the crackling to puff and crisp.

Moisture is the enemy of good crackling, so keeping the rind as dry as possible makes all the difference.

Cooking Times

As a general guide:

  • Roast at 220°C (200°C fan) for the first 30 minutes.
  • Reduce the temperature to 170°C (150°C fan) for the remainder of the cooking time.
  • Allow approximately 25–30 minutes per 500g, depending on the size of the joint.

For the most reliable results, use a meat thermometer. The thickest part of the pork should reach around 65–70°C, and the temperature will continue to rise slightly while the meat rests.

Don’t Forget to Rest

One of the biggest mistakes is carving the pork straight from the oven.

Instead, loosely cover the joint with foil and allow it to rest for at least 20 minutes. This gives the juices time to redistribute throughout the meat, making every slice more succulent.

Add Flavour

Leg of pork works wonderfully with a variety of flavours.

Some of our favourites include:

  • Garlic and rosemary
  • Honey and mustard
  • Maple syrup with smoked paprika
  • Apple cider and thyme
  • Lemon and fresh herbs

If you’re using a glaze, brush it over the meat during the final 20–30 minutes of cooking, avoiding the crackling where possible to keep it crisp.

Making the Most of Leftovers

One of the best things about a leg of pork is that it keeps on giving.

Leftover pork is perfect for:

  • Sandwiches with apple sauce and stuffing
  • Homemade pulled pork rolls
  • Stir-fries and fried rice
  • Tacos with crunchy slaw
  • Pasta dishes or hearty soups

Stored correctly in the refrigerator, cooked pork will keep for up to three days and can also be frozen for future meals.
