1. Ultimate BBQ Sausage Dogs
Serves: 4
Ingredients
- 8 Prendergast Butchers award-winning sausages
- 4 brioche hot dog rolls
- 2 onions, sliced
- 100g mature Welsh cheddar, grated
- Crispy fried onions
- BBQ sauce or wholegrain mustard
- Gherkins (optional)
Method
- Grill or barbecue the sausages for 15-18 minutes, turning regularly.
- Slowly fry the onions until caramelised (around 20 minutes).
- Toast the brioche rolls.
- Add two sausages to each roll and top with onions, cheese, crispy onions and your favourite sauce.
2. Honey & Mustard Sausage Tray Bake
Serves: 4
Ingredients
- 8 sausages
- 750g baby potatoes
- 2 red onions, cut into wedges
- 2 mixed peppers, chopped
- 1 courgette, sliced
- 2 tbsp honey
- 2 tbsp wholegrain mustard
- 1 tbsp olive oil
Method
- Heat oven to 200°C.
- Toss the vegetables with olive oil and roast for 20 minutes.
- Add the sausages and cook for another 20 minutes.
- Mix the honey and mustard together and drizzle over everything before returning to the oven for a final 10 minutes.
Serve with fresh parsley.
3. Summer Sausage Pasta
Serves: 4
Ingredients
- 6 sausages
- 300g pasta
- 250g cherry tomatoes
- 2 cloves garlic
- 1 courgette, ribboned
- 100g spinach
- Fresh basil
- 50g grated Parmesan
Method
- Cook the pasta according to the packet instructions.
- Remove the sausage meat from the skins and fry until browned.
- Add garlic, tomatoes and courgette and cook for 5 minutes.
- Stir through the spinach until wilted.
- Mix with the cooked pasta and finish with basil and Parmesan.
4. Welsh Sausage & Cider Casserole
Serves: 4
Ingredients
- 8 sausages
- 2 onions, sliced
- 2 apples, chopped
- 2 carrots, sliced
- 500ml Welsh cider
- 2 tsp fresh thyme
- 1 tbsp plain flour
Method
- Brown the sausages in a casserole dish.
- Remove and soften the onions and carrots.
- Stir in the flour, then gradually add the cider.
- Return the sausages along with the apples and thyme.
- Simmer gently for 40 minutes.
Serve with creamy mashed potatoes or crusty bread.
5. BBQ Sausage Skewers
Serves: 4
Ingredients
- 8 sausages
- 2 peppers
- 1 red onion
- 8 mushrooms
- 1 courgette
- BBQ glaze
Method
- Cut the sausages into three pieces.
- Thread onto skewers with the vegetables.
- Brush with BBQ glaze.
- Cook on the barbecue for around 12-15 minutes, turning regularly.
6. Warm Sausage & Potato Salad
Serves: 4
Ingredients
- 6 sausages
- 500g baby potatoes
- 100g rocket
- 6 radishes, sliced
- 3 spring onions
- 100g crumbly Welsh cheese
Dressing
- 2 tbsp olive oil
- 1 tbsp wholegrain mustard
- 1 tbsp white wine vinegar
Method
- Cook the potatoes until tender.
- Grill the sausages and slice them.
- Mix the dressing ingredients together.
- Toss everything together while still warm and crumble over the Welsh cheese.
7. Breakfast Sausage Wraps
Serves: 4
Ingredients
- 8 sausages
- 4 tortilla wraps
- 6 eggs
- 4 hash browns
- 100g grated mature cheddar
- Tomato relish
Method
- Cook the sausages and hash browns.
- Scramble the eggs.
- Warm the wraps.
- Fill each wrap with sausage, eggs, hash browns, cheese and tomato relish before rolling up tightly.
